So... I made a batch 3 months ago... I know it's still young but I just took the first gravity reading since brewing.

I used about 15 lbs of honey for 5.5 gallons, or there about. OG was 1.092, put in some yeast nutrient an yeast energizer

I re-hydrated 2 packets of D47 yeast in some luke warm water and then pitched after aerating.

Gravity is now 0.993, smells like honey/rubbing alcohol and tastes like watery death.

Can I add some honey to the carboy? I've got to do something, way way to dry, even if the nasty smell goes away it's like drinking vodka.

From everything I have read, as long as the yeast are dead or you have stabilized the mead you can back sweeten with honey and not worry about fermentation kicking back up. I'd dissolve the honey in a little water so it will be easier to mix in. As many people have advised, time will mellow out your rocket fuel mead :D

Also be careful with D47 next time. It is a great yeast and my favorite mead to date used D47. But if you don't keep the temperature below about 69*F - 68*F you get lots of fusal alcohols which taste like rocket fuel powered vodka. Just get some Camden tablets and potassium sorbate. Use those per package directions and add honey to your wanted gravity. Between 1.01 - 1.03 depending on if you want semi sweet to desert mead.
