I went ahead and ordered my hop rhizomes the other day and couldn't help but order some whole hops along with them. Along with a stash of the necessary hops for a couple summer saisons, I got 4oz of Amarillo and 2oz Simcoe.
I've got about 10 batches, both extract and PM under my belt, but I don't have a great idea of the different flavors of hops and base malts. Would a couple of SMaSHs be in order? I was thinking of doing a MO/Amarillo SMaSH but am not convinced. I've heard the Amarillo/Simcoe combo is great, is there a "go to" recipe you would use for one or both of these two hops?
Thoughts? Too many options and too little brewing time makes me seize with indecision!
