A buddy and i are brewing the none more vanilla stout and the recipe calls for Northern brewer pellet hops 1oz at 7%. The LHBS had 1oz at 8%. He told me to use .875oz. My question is what would it do to the taste if i used the whole oz.
 
I am not sure how to answer this without sounding like a dick, but it would taste "more hoppy". haha but seriously it will have more of the fruity flavor and aroma that the hop adds to the beer.

You can also boil it slightly longer to wind up with the same bitterness in the final product as you would had you used 7% AA. However i don't know the exact time conversion.

It would be slightly more bitter, but not more "hoppy" since the 60 minute addition only adds bitterness and no flavor or aroma.

Also, if you wanted less bitterness from a higher AA hop, you would need to boil for a shorter amount of time, not a longer amount of time. I'm not sure why you'd do this though since just adding the lesser amount of hops would be easier.

If it were me I'd just add the ounce of 8% hops and roll with it. 1% AA is not going to make a huge difference at all.

Fixed that for you. Bittering hop additions do influence flavor. ;)

Well we just added all the hops but now realize that we are ******* and added 3/4 of a lb to much roasted barley and 1/4 a lb to much black patent. Any idea on what this is going to do to the beer.
 
Well you will have a thicker mash unless u add more water:D probally have a more roasty taste too

This seems like one of those brews where you just say "F*ck it" and let it ferment. Then you bottle it and find out if your recipe is a keeper!

I actually have the most fun with those batches

I'm a stout fan and always use 1lb of roasted barley. I take this to mean that you have added 2lbs total of roast and black.

That's going to be some burnt tasting stout. Probably will be good with a few years of aging.
