I tried following Brewing Classic Styles American IPA recipe, however, i had trouble finding 3 out of the 4 hops it calls for.

Hop Schedule:
  • 1oz Horizon 13% @ 60
  • 1oz Centennial 9% at 10
  • 1oz Simcoe 12% @ 5
  • 1oz Amarillo 9% at 0

I could only find Centennial at my LHBS, so i bought a few others that were "substitutes" according to their chart, but with this much substitution I'd imagine the results will be very different.

So heres what I have in stock at home, what do you recommend? I was thinking Magnum for bittering and centennial the rest of the way, but i don't know which hops go well together yet.

  • 1oz Cascade 5%
  • 2oz Magnum 13.1%
  • 3oz Centennial 9.5%
  • 1oz Northern Brewer 8.1%

If it were me I would bitter with the magnum then use a mix of cascade and centennial for the last 3 additions.

Yes, that's what I was going to say!

Like this:

,75 oz magnum 60 minutes
1 oz centennial 15 minutes
1 oz cascade 5 minutes
1 oz centennial 0 minutes

Dryhop with centennial/cascade or any other C hop.
