I've got about 1/2 lb each of chinook, cascade, and willamette hops in the freezer. I've also got an oz or two of centennial and simcoe.

I'm looking to brew a biggish IPA (probably ~7-8%) this weekend. Any suggestions about grain bills, hop schedules, etc? I'd like to brew something kinda piney and dank.
 
I wouldn't be opposed to brewing a smash. I've never done one, and the idea is appealing to me.
 
I do 5 gallon batches. I like using WLP001, but I'm open to other suggestions.
 
What about 10# Marris otter, .5# honey malt, 2# munich 10L mash at about 148 and a hop schedule of....

1oz chinook to bitter at 60
.5oz cascade and centennial at 10
.5oz cascade and centennial at 5
.5oz cascade and centennial at flameout for about a 10 min steep before chilling
Then dryhop with 1oz simcoe, 1oz cascade?

It wont be a mega ibu ipa, but that would be tasty and balanced between hops and malt with the 001

If you want a little color add about .5# C60....if you want to add some earthiness to it, replace the centennial with willamette.
 
Or a smash of 11# vienna malt and cascade at 60, 10, 5, flameout and dryhop of 2oz....i love vienna smash beers, but i perfer that with a kolsch yeast, fermented for 2 weeks at 64, then dropped to 40 for another 2 weeks
 
You've got most of the right hops to do a Pliny the Elder clone (the one I did used Columbus, centennial, and simcoe). Just need some two row and Caramel 40 or 60.
