So I'm planning my next IPA. I've got a good solid recipe I've been tweaking and just trying out new hop combos. My last one was HallertauBlanc/Belma/HuellMelon and it had a great unique berry and melon flavor with little to no citrus. I want to try something a bit different for this next one - maybe a bright tropical flavor sort of like pineapple, banana, mango...I want to steer away from resiny pine flavors but some citrus would be OK. I know one of the hops I want to use is Azzaca because I have 4 oz and havent tried it yet. I have the following available (I have at 4oz or more of each):

Simcoe
Amarillo
Mosaic
Pekko
Citra
Hallertau Blanc
Comet
Pacific Gem
Rakau
Kohatu
Mandarina Bavaria
Huell Melon
Ella
Falconers Flight
Jaryllo


I'm leaning towards Jaryllo and Mosaic with maybe some Citra in the keg hops. Thoughts?
 
Going for citrus/tropical, Mosaic and Citra would be my choices out of that list as well. I've never tried Azzaca either, let us know what you decide and how it turns out.
 
Just did the following IPA:

5 Gallons

Mash at 150 for 60 min/Boil 60

US-05 rehydrated

OG: 1.057
FG:?? Aiming for 1.010 or lower

7lbs Patagonia 2-Row
.5lb Crystal 10
.5lb Munich
2lbs DME flameout

1oz Apollo FWH
1oz Apollo 10 min
1oz Comet 5 min
2oz Centennial 30min hop stand
2oz Azacca 30min hop stand

I will probably dry hop with:
1.5oz Centennial
1.5oz Amarillo


This was a great beer. Pretty much grapefruit at first, but once it conditioned more of the Azacca tropical flavors emerged. Subtle but there.
