I will soon be brewing a Brewers Best Milk Stout. I have been doing some reading up on milk stout styles and have come to find out that the hop levels are a bit lower than my usual liking. The recipe calls for a bittering hop addition of .5 oz at 60 minutes and an aroma hop addition of .5 oz at 10 minutes. Can anyone tell me if it would be smart or not to make a hop addition with some left over German Spalt Noble hops...or do I chance ruining the integrity of the beer? In case anyone is wondering the reason for the consideration is my love for hops v my love for dark roasty beers.
Any and all input and opinions are appreciated!
 
The best part of homebrewing is that you have the liberty to experiment and create unique beer. So, if you like more hoppy character, then by all means go for it. It might be great, or it might not turn out so well. You won't know unless you try. Sure, it might not fall within the BJCP style guidelines, but if you aren't submitting the beer to a competition and just want to create something that tastes good to you, then no harm no foul. A little added hop bitterness or aroma probably won't ruin the beer, but it may take away from the typical milk stout character. But if that's what it takes to create a beer you enjoy then more power to you.
