Just bought a honeycomb oak cube, couldnt find any threads on them and had some questions
Heres a link http://www.homebrewing.org/Honeycomb-Barrel-Alternative-White-oak-_p_3323.html
I plan on brewing my imperial stout and bourbon aging it with the oak honey comb.
It says in the package that extraction time is 6 weeks which seems really quick
and also states that you should really watch it not to over oak the beer.
So my question is would this apply to me because i am brewing a complex beer that might benefit from sitting on it longer especially having soaked in bourbon, i could see over oaking a lighter beer or wine detrimental
also is it better to soak in bourbon for an extended period of time to allow full penetration of the oak
Stoked to hear feed back
I have brewed this stout a couple of times now and feel confident it would benefit from some bourbon
Planing on bottling this some time in oct/nov to be ready in the dead of winter here in michigan
