I'm wondering if anyone has any experience with this. I'm brewing a new Berliner using homofermentative lactobacillus followed by a large pitch of brettanomyces bruxellensis trois. My understanding is that since the lactobacillus is homofermentative it shouldn't create co2, yet my fermenter is bubbling like crazy. I'm planning on pitching the brett within the next couple of days so I'm going to let this one ride either way. Just looking for some input...
