last bottle from my mom's Birthday party (she's Belgian)

Is this a good yeast to try and grow from?

They use a different yest for bottling than they do for fermenting.

Speaking of Hoegaarden, I was watching The Colbert Report last night and he was drinking a Hoegaarden in one scene.

Dude, I saw that...someone chugging Hoegaarden on teevee!? Even though it was probably really cream soda in there, I still appreciate the fact that it wasn't bud or miller.

My wife racked up some geek points for me when I spouted out "He's drinking a Hoegaarden!" To which she replied "A Who What?"

In my younger days, I never thought it would be possible to be a beer geek. But it is, it is.:(

I didn't see that.

I assume the point is that the yeast they use for bottling is not anything special for fermenting then...

Sure it's nothing too special - but why not give it a try? Harvest it, make a starter, and get ready to make a Belgian White. Let us know how it turns out!

hmmm, OK.

anything special I should know about Wit?

I'll start searching for a recipe now.

I can tell already I need Cornies, I don't wanna be washing all these bottles...

Such as

Ingredients:

-4lbs Premier wheat malt extract
-1 lb light DME
-1lb wheat DME
-1lb flaked wheat
-1oz Tettnanger hops X 60 minutes
-Yeast
.5 oz bitter orange peel
1 oz corriander

-Steep 2 gals. of hot water (130) with flaked wheat for 30 minutes with the heat on low (150). Strain out most of the flaked wheat, leaving some to give the beer its cloudy appearance. Bring to boil, add malt extracts and hops..etc.etc.etc.

Use the Hoegaarden recipe in my sig link. It needs to condition for a few months, but it's dead-on Hoegaarden.
