It can go through a lot of changes I guess right? Some lambics have awkward periods for a few months.

It's totally possible. Crooked Stave recently had issues with diacetyl in some of their beers (e.g. Persica), and from what I understand, the solution was to let it sit at room temp vs cellar temp to let the bugs finish cleaning up the diacetyl. This could very well be what's going on here, though I obviously am speculating, didn't make either of the beers and have no clear idea what I'm talking about.

Pedio can kick out a lot of diacetyl even after bottling. Brett is able to clean up a significant portion. Live beer does what it wants and brewers have zero control.

My bottle had zero butter when I opened it after the release.

Same. Haven't had one in a few months though, so i can't really speak to how it's drinking now
 
CD6 is still meh imo, time isn't making that beer any better.
CD6 was soooooooo much better than 5

I like and respect you both, but somehow you're both wrong :p. I thoroughly enjoyed CD6 fresh, and think it has only improved with time. However, CD5 may be the best HF beer I've ever had. Pretty much tied with Juicy.

CD5> Juicy> CD7> CD6 personally. That being said, CD6 fresh outpaced cd7 for me. Based on how it has developed I'd have to say 7 is better, at least based on the bottles I've had.
 
I opened a CD7 a few weeks ago. Completely disappointed. A huge diacetyl bomb. The good news is I will be opening a few more at the end of may for a tasting. I hope it was just a bad bottle.

Anyone open a CD7 recently?

Saw 3 recent reviews on the other site that basically said it was infected and not worth drinking.
 
had a CD7 a few weeks ago, tasted great.

opened a CS Batch60 2 days ago, tasted great.
opened a CS St Bretta Spring (last years) last week, had some butteryness to it.

think there's just quite a bit of bottle variation out there. with the CS Persica blends from last fall, we opened a 1 and 2 a few weeks after release and in our bottles 1 was clean but 2 was buttery. spoke to a friend who had both around the same time and he said the opposite...
 
Ok, lets get real about CD6. My theory is because it was limit 6 at the release, it was perceived as "not that limited" which directly affected how people rated it. When it came out people were trading it away like it was a shelf turd. How can a beer that is 3/4 Juicy, Flora, and Clara be seen as so average. The 1/4 Sankt Hans does not dilute the awesomeness the other beers bring to the table. In fact, the 1 yr old bottle of B1 Sankt Hans I had was awesome, so honestly I think it only adds to the equation. If CD6 were a single barrel blend that was limit 1/pp (like CD7/8, not taking away anything from those two beers) it'd be one of the highest ranked HF beers ever.

This could likely be a cross post with the drunk post thread, but I just had to get this off my chest.

CD6 was not very remarkable for me compared to the rest of their sours. But the CD/MC series is often overlooked by anyone other than the people going to HF. Mostly because it takes effort to keep track of the releases.

Yeah I had CD6 at the beginning of February. Was good, but wasn't blown away by it
