Hi, I'm John from near Edinburgh in Scotland. I started brewing with kits when I was 15 and then after a long hiatus restarted brewing when I retired 12 years ago. I do biab using a Burco tea urn with a stainless steel mash basket and recirculation plus temperature control. I transfer the wort through a strainer into a Klarstein SS fermenter and bottle directly from there. I like to keep recipes and process simple. I brew M84 hoppy lagers, various saisons, stouts and bitters. I use Voss a lot with a Traquair House style ale being a recent brew coming in over 10%. I'm planning to repeat that soon. I'm here for the technical discussion. I'm no expert but I'll put in my two penneth if I think it will help. I also make wine from kits but that's just keeping Wifey happy and is a bit of a chore to be honest. Cheers John.
