I was thinking about brewing a light summer pale ale that would be light in color like a pilsner or a blonde but not using as high % of wheat as most blondes I've tasted and using american/nz/aussie hops. Safale us-05 will be the yeast of choice (have 10 packs of it and nothing else.

I will not order any more grains or hops so I will use from what is available.

I will be doing 20 liter/5 gallon batches. I don't think I will use any of the extract as I'm keeping those for a high gravity IIPA.

I have already brewed 3 batches but they were more within style. 2 pale ales and a hefeweizen. This will be sort of out of style.
I want to keep the IBU below 30 and the ABV around 5 and the color light like a golden pilsner but not watery like bud lite or corona.
I don't want it too bitter but I want a decent amount of hop flavor/aroma so I'm thinking plenty of late hopping.

Any good suggestions for a grain bill and hop schedule?
 
I made a very light color ale by using pale malt, white rice (ground with my Corona mill) and corn meal. A little carpils might help add body and head retention and you can use some pale crystal for complexity and color.
 
Thanks but I wasn't planning on using any rice. Mainly barley, maybe up to 5% wheat.
 
how about 5% wheat, 10% vienna, remainder 2-row. then something like
0.25oz hops @60
0.75oz hops @15
1.5oz hops @0
personally I'd probably split the late hops among simcoe, amarillo, & centennial from what you have, but I dunno what flavor/aroma you're trying to accomplish from them.
 
Thanks. If you say simcoe, amarillo and centennial is a good combo I may try that.

I'm thinking of increasing the amount and moving the late hopping from 15 to 10 minute for more hops and less ibu. Also thinking of adding a total of 2oz for dry hopping.
Any input?
 
I was thinking about fermenting this using my bathtub, pitching at around 13C/55F and keeping it under 18C/65F to make it more clean and non estery. Just like the low ibu, keeping the macro lager drinkers happy (can't try brewing an actual lager until winter).
I have however read on this forum about safale being "peachy" at the low range of it's temperature... Doesn't sound too bad, who doesn't like peaches :)
But seriously, to make it clean and crisp is there an alternative to safale 05?
 
I know others do get it, but I almost always ferment S05 that low and have never found it to be peachy. if you can keep it close to 60, nottingham is very clean n crisp.

I think the recipe looks great. That color should be a pale golden yellow I believe

Keep the 05 at 64-68 and it will be good, I use it all the time. That recipe looks good.

Pitched at 17c/60F, it kept at around 19-20c/66-68F for a few days, moved up to 22c/71.5F for a few hours before I got the temp back down to 20c/68F. Hoping it will turn out good.
 
Update:

My best brew so far. Thanks to dcp27 for the hop combo suggestion. I'll definitely brew this one again, it's almost empty already.
