Ok on 5-28-06 we started our first mead. The OG was 1.112. Well after many months of problems I've got the FG to 1.030. I would like to get it lower, what can I try next. On 6-30 I pitched yeast made with a starter (Wyeast 3184) and on 8-28 I pitched a yeast starter (champagne yeast)

6-11 1.082
6-28 1.072
8-27 1.074 :confused:
9-30 1.030

how do you find the attentuation of the yeast your using? I have checked on the comapnys website but it doesn't list it. I used Lalvin EC-1118 Champagne Yeast
 
There was a guy that came in to my local HBS, about 2 hours after Creger did, last Saturday. (I work there.) This guy is an OLD friend of the owner, and he is also a long-time meadmaker. So, I picked his brain for a while, as well as sampling a 7 year old bottle he brought.

He said, after primary fermentation is finished, he racks to a secondary carboy, and stuffs the carboy in his closet for a few years. All he does, is check the airlock every month or so.

Let it go, forget about it, but check the bubbler a few times a year. (And, have a Homebrew!)

I'm going to do this to today before I start my Hefe
 
I,m going to rack it and wait and see what it does, I was not looking to get into it untill next May or June.
 
Mines still bubbling away at 6 to 7 bubbles a minute, I'm goin gto wait another week and check it again. I think as soon as it gets to a bubble every 30 seconds, then I'll rack.
