So yesterday I started a muntons cerveza kit, I didn't add anything additional aside from the required 1kg of brewing sugar. Fermentation has started already. Looking at the instructions I'm wondering if they are really what I should be doing?
The kit says "Fermentation complete in 4-6 days, bottle for 14 days or until clear"

Should I be doing a secondary? Is 14 days really enough for it to be drinkable? Also I know its not a true cerveza given the yeast supplied.

If you bottle a beer as soon as fermentation is completed you will get a huge amount of sediment in every bottle. By day 10 a lot of that sediment will have settled out in the fermenter and with a bit of care you can leave it there instead of adding it to your bottles.

Do you want a beer that is "drinkable" or do you want decent beer? I prefer to give my beers longer to mature and drop out more of the suspended yeast. 3 weeks is often suggest as minimum. For darker beers I give them more time. The darker the beer (and the higher the alcohol) the longer I leave them before I start drinking.
 
I always ferment for 14 days, then bottle, & let them sit for 2-3 weeks in a dark cool place. Then i'll throw them in the fridge for about a week before drinking them. They always come out not crystal clear, but pretty clear. Secondary is unnecessary. Hope this helps.
 
The recipe is basically having you secondary in the bottles. It may cause inconsistencies between each bottle but shouldn't be an issue. 4-6 days is a short amount of time. When the fermentation ends, wait at least 3 days to let the flavor clean up and the yeast to drop out. If you have the ability to cold crash, do that before bottling. Then wait a week, cut some limes and enjoy.
