Help needed, how to use stout conical fermenter?

So I bought this really nice Stout conical fermenter and am scratching my head over how to use it. I bought it from a guy off Craigslist. Came with everything but instructions. Even came with the co2 gauges.

I’ve searched YouTube and haven’t really found any good videos on how to use it, what it does to the fermentation process, speed it up? What psi? Any special attention to temperature? Airlock?

I understand the whole conical design, but the co2 gauges are throwing me off!

I’m really scratching my head over this thing! Any help/advice would be much appreciated. I’m really wanting to try it out!
 
Do you have a photo of these gauges? There shouldn’t be anything unique to using a Stout conical versus other conicals which is why it doesn’t come with a manual. Sounds like you just need help understanding the parts. Share some photos of the unit or the parts and folks may be able to help you.
 
So are you asking how to use the thermometer? Or are there things the last owner added? I have the 12.5 gallon stout version and a knock off 7.3 gallon version of these they are not suitable for carbonating in them. (they wont hold more than a pound or 2 pressure. The model you shared is not a unitank and not designed to hold pressure. I have slightly pressurized mine while pushing beer to a keg.
Im not sure why any gauges would be installed maybe the previous owner though he could make it hold pressure and sold it when he realized he had the wrong product? When you crank down the lid be sure its centered well on the tank and crank until you see pressure cause air to escape the airlock or blowoff hose.
As far as the conical goes the bottom valve is to dump trub and dead yeast and the lower side port is what you use to bottle or keg from.

As far as speciael attention to temp , Of course. They should be kept at the ideal temps for fermenting the style of beer you want to make and temp control is one of the most important things in changing how a beer tastes. some people use a dedicated fridge or a coil which stout sells in a lid for these or a fermentation jacket whch can also be bought and used (I use the carboy jacket from cool zone which fitsa them perfectly on one and blue discharge hose on all the rest of my conicals.
