Got the following grain & hops available. Inspired by many of the Amber recipes I have seen on here and elsewhere.

Does anyone care to suggest a recipe from what I have in stock. I'd be hoping to make around 7 gallons. Here's what I have.

11 lb CDN 2-row
1.1 lb Munich
1.1 lb crystal 40
1 lb crystal 120
1lb victory
.5 lb chocolate malt

Hops in stock
Cascade 2plus oz
Citra 2 plus oz
Willamette 1 oz
Simcoe 1 oz
Crystal 2 oz

I expect to use just 1-2 oz of the chocolate. Just listed all I have right now,

Anyone got a suggestion?

I like my ambers in the 40 IBU range so I would bitter with Simcoe then do some late additions of Citra, Cascade and Willamette if you're feeling frisky.

If you really want to use the chocolate I would go with a grain bill with the attached picture. Personally don't use chocolate but that's what I would use if I did.

Here's how I'd go about it, but of course you'll find tons of opinions:

Malts at roughly these proportions, but upping the 2-row depending on your ABV, personal preference would be between 4-5% ABV:
8 lb CDN 2-row
1.1 lb Munich
0.5 lb crystal 40
0.5 lb victory


Hops:
0.5 oz Cascade @ 60 min
1 oz Citra @ 12 min
0.5 oz Citra @ 3 min
0.5 oz Willamette @ 3 min
0.5 oz Willamette dry hop

Water profile that's clean but allows hops to be crisp
(Hoppy Lite water profile from BrewFather): Ca: 110, Mg: 18, Na: 17, Cl: 50, SO4: 100, HCO3: 258
