So I transferred my IPA to keg Christmas day and left some beer on top of my yeast cake and put the air lock back on. It's been sitting in my fermenter for 11 days at 40°. Just got back into town last night.

Would I still be able to harvest that yeast and use it for future batches? The beer I left on top of it still looks healthy since I left the airlock on.

Heck yeah, you were close to refrigerator temps for 11 days anyway. You are golden!
 
With beer covering the yeast it would be the same as leaving all the beer in the fermentor for an additional 11 days.
