I suppose it is my turn to say hello. I'm a new brewer located down in Wilmington NC. So far I've jumped into this hobby head first, it is extremely fun for a biologist like myself. It is reminding me of days in the lab.
I just bottled my first extract brew (Amber Ale), it has progressed nicely. My second batch, an AG Oatmeal Milk Stout, is going great after a week into fermentation (82% efficiency, i think, woohoo!). After one week the beer is tasting better than the swill I used to drink! I just milled the grains for batch #3, an AG Porter, I'm gonna try to clone a Left Hand Blackjack Porter.
None of these things could be possible without the information the community here has passed on to us new guys. For this I thank you.
