Just found this forum yesterday so I thought I would join in. I've been brewing since 1996, mostly all-grain. I'm kind of a "wing it" type of brewer, and like to develop my own recipes and brew style. I used to carefully develop recipes ahead of time, but now I usually drive to the brew store with a hankering for a particular beer flavor, then just develop the recipe on the spot. I have learned to trust my instincts over time, and I've always been happy with the results.
When I get stressed and need to be in my comfort zone, I spend the day brewing. It's very therapeutic for me, and it's not just the homebrew I consume! This is one hobby that I enjoy the process as much as the final product.
Cheers!
