Hi, as my nic suggests, I am from Wales, UK where some excellent real ales are brewed by small, independent brewers as well as hobby brewers like me.
Always keen to learn from more-experienced home brewers and open to new recipes, especially those that have "unusual" ingredients.
I have used boiled figs, dates, strong percolated coffee, 100% pure maple syrup and speciality honeys in various batches over the years and have enjoyed the product of my labours. I joined this forum after reading a post in which someone said he/she wanted to brew using DME instead of using a kit and one reply suggested that steeping a few "speciality grains" would be worth the small amount of effort. I liked the sound of that but I needed to register in order to post a request for more info. So, anyone who can suggest some speciality grains for me to add to my next brew, I would be very grateful Thanks for reading this,:mug:
 
If you go to Northern Brewer's website and look under extract kits, you'll find each has an information sheet showing the steeping grains. There is a bunch of different such recipes, perhaps something there might give you an idea or two.

Under "Additional Information" click the link for the recipe and instructions.
