So I've recently become a yeast ranching fiend.

Question for you guys: I'm in possession of Great Divide's Colette and Belgica. There seems to be quite the amount of sediment in each of these bottles. Anyone know what kind of strain is in each?

I've talked to a few employees about the yeast they use. They've said they use about 20 different strains, depending on the beer. Their Belgians use some mix of wild yeast or Brett or some hardier strains. They ferment those in vessels out in their parking lot, and bottle them by hand so they don't get infect the main brewery with hard-to-kill yeast. I don't know what strain(s) they use, but I got the impression of a unique blend (or blends).
