I started a batch of cider using about a gallon and a half of pureed peaches. To the Peoria added about 5 gallons of water per bucket. Unfortunately I forgot to take an original gravity. Is there a way to find out final gravity without taking an original with this process.?
 
Assuming you have a hydrometer, you can measure final gravity (i.e. the gravity when fermentation is finished) regardless of whether or not you measured original gravity. But without the OG, you won't be able to calculate ABV.

But if you know how much water, apple juice, and peach puree you used, you can estimate the OG.
 
Yes, if you have both a refrac, and a hydro. when it's done, measure it with both, then use a calc to eduguess the OG and ABV....(so far for me it's been pretty spot on)
