This is the grain bill for a pale ale I'm doing with magnum, el dorado, and mandarina bavaria hops...
5.5 gallon batch

9 lbs 2-Row
12.0 oz Caramel/Crystal Malt - 30L
12.0 oz Caravienne Malt
8.0 oz Cara-Pils/Dextrine
8.0 oz Honey Malt

Single Mash @ 152f, Batch Sparge @ 168f.

Going to use London Ale III for 2-3 days and then finish it up with US-05 @ 68f.

Question: Will the ingredients outside of 2-row thin it out too much, be too sweet?

My hope it is have a clean, medium bodied, slightly sweet orangy/citrusy pale ale...
 
You've got over 20% caramel malts there, so it certainly won't be thin. And my guess is it'll also be pretty sweet, though it's hard to say without knowing your estimated OG and IBUs.
 
I agree, I wouldnt go over 10% crystal in a pale ale. That's more like stout territory for me.
 
Ok, how about this... I do want it to be sweet, but not cloying, so maybe this is a good balance?

10.5 lbs. 2-Row

I dont think youll need to add US-05. WY1318 is a great yeast and it shouldnt crap out on you. Be sure to use a blowoff, it makes a lot of krausen. It usually refuses to subside too. I've had to punch through a layer of it to bottle, and this was at 3 weeks
 
Drop the honey malt. It all sounds a bit malty and sweet, but I think that goes well with Mandarina Bavaria.

I like the idea of mixing yeast, so the 1318 would start the process and then us-05 would clean it up at the end to give it more of a mixed body and flavor between the two... No starter btw, just pitch the two, U.S.-05 a few days after 1318.
 
This turned out very well! I ended up adding another 1oz of orange peel during the secondary since the orange didn't come through as much as I hoped after primary. Great mouthfeel, juicy and a little more orange than I wanted, but it's a really good beer! Thanks for all the help people! :ban:
