Something that is simple in ingredients but not as standard as a show mead "which is just honey, water & yeast", is a Bochet. Look that up on this sight. It is getting to be more and more popular these days. The recipe can be simple like this:
1 gallon Bochet
3lb of clover honey boiled for 1.5 - 2 hours. (please see warnings for boiling honey on most of the other threads)
Small handful of Finley chopped raisins for yeast food
Boil 1tsp of bread yeast in 1 cup of water for 15 min and cool to add as yeast food.
Add spring water until at one gallon
Shake/ aerate a lot
Pitch a champagn/wine yeast
Add airlock an rack every couple months till clear.
The great thing about mead is that there are so many ways to prepare it. The above Bochet is simple and can be done with a few walmart ingreadiants lack the yeast. keep looking around untill you see something you like and go for it.
