My Uncle asked me for a ginger stout recipe, and as I couldn't find one anywhere, I decided to come up with one of my own. I was hoping for some suggestions (oh, and he's an extract brewer), here goes...

6.6 lbs pale LME
3/4 lb crystal 80L
1/2 lb roasted barley
1/2 lb flaked barley
1/4 lb black patent
4 oz freshly grated ginger
1.5 oz Northern Brewer (Boil x 60 min) - 2.5-3.0 Gallon boil
Irish Ale Yeast

My suggestion on handling the ginger: put the ginger in at flameout, the longer you heat or boil the ginger, the more it looses that front-pallet ginger heat. and the extra in the secondary is another great suggestion.
 
The flaked barley needs some 2-row in order to convert it, it does not have the diastatic power to convert itself.
