I have a gold pitch package from Gigayeast (vermont IPA) that was produced on 4/4/15. I know its pretty dated, but I'm trying to figure out if I can still make a starter with it? According to Mr. Malty the viability should be about 10%...however the gigayeast package has a much higher cell count to begin with(i believe white labs is 75-150 billion). Thoughts?
 
Mr.Malty is very conservative. Make a 2 liter starter. And if you need more, crash, decant and follow up with 5 liter. That leaves you some to put back in the fridge.
 
should I just go about making a starter as usual? or make a larger starter than I normally would? I'm planning on brewing a 1.040-1.050 beer. 10g batch
