Hi

I tried an experiment using un malted grains.

3kg raw millet
1.5 raw buckwheat
2kg flaked corn
14l water
Cooked for 30 mins
Dropped temp to 65oc
Added emeylse 3tabke spoons.
After 2 hrs sparged with 10l at 78oc
Sp 1030 prior to boil
14grams Simcoe @60mins
250grams mesquite powder for sugar and malt taste (hopfully)
Ended up with 10l at 1060
Added 4l water to make 14l at 1040.

Brewing now fingers crossed.

Any thoughts?

Looks pretty turbid, but that isn't always an issue. I guess what you'll find out is how much of that sugar is complex 5 chain sugars compared to simple sugars once fermentation is complete. Brett can always chomp away at those complex sugars if it turns out to be the case with a high FG left. Only time will tell.

Hi i ued BRY97 and its still fermenting, will keep you posted. In not tht hopeful.
