Gewürzt Apfel Cyser and others

So this is my first Mead with hydrometer readings, just put it together yesterday and being at work with a bit of free time decided to make my first real post. So first with the Gewürzt Apfel Cyser (Spiced Apple Cyser):
6 Gallon Batch

~15 lbs Wildflower Honey (Couldn't get the lavander honey in time)
4-5 Gallons Treetop Apple Juice (to fill/top off)
~20g of Masala Chai Tea (Loose leaf, but in a mesh bag)
1 2oz packet of "Mead Nutrient" (sold at my LHBS, don't really know what it is)
1 Packet of Red Star Premier Cuvée Yeast

My OG was 1.112

This is the first with hydrometer readings, and I have 3 others in 1 gallons that I started ~week or so before I got the hydrometer. But my others include:
JOAM - everyone knows it, nothing new here.

Habanero Capsicumel:
~4 lbs Wildflower Honey
3 Habaneros, deseeded only, in halves
Water to top off

Plain ol' Mead:
~3 lbs Wildflower Honey
Water to top off

Both the Habanero and the Plain shared a packet of Premier Cuvée yeast


Let me know what you all think, I have DAP and Fermaid K, along with the "Mead Nutrient" which I do have in the 1 gallon batches besides JOAM. I've done a few Apfelwein batches but that is the extent of my brewing, so I'm a total noob still.
 
Yeah I thought of that when it still wasn't going this morning before work, but I got home tonight and it is bubbling strong!
