I was using an automated natural gas HERMs setup for brewing. I moved to a new house and the natural gas is on the opposite side of the house from where I will be able to brew. Also, this house already has both a 30amp and 50amp outlet in the garage. (previous owner had a welder and air compressor for building hotrods.) I have already swapped out the breaker to a GFCI breaker.

My struggle is the controller. I don't feel comfortable designing and building my own 50amp panel. But wouldn't have a problem building out one of the ebrewsupply controllers. At this point I have been trying to decide between the HoseHead 5BC and the 50amp BCS from ebrewsupply. I am not sure what else is out there nor can I decide which is the best choice. What is the long term viability of both of them? It doesn't seem like the BCS has been updated in forever, and if the person running the Strangebrew Elsinore project stops updating it, both have longterm support issues. Other primary concern is the temperature probes. The ebrewsupply probes are industrial quality, thread into npt fittings, and have quick disconnects on them so. I have concerns about the accuracy of the Hosehead probes and how they integrate into the system.

If you were buying right now, which controller would you buy? Should I consider the Brew-Boss?

If you are uncomfortable about the continued availability of software support, then perhaps you should look at an EZBoil/PID based panel that requires on on-going software support. Although this may not be an option if you want automated control of process timing.
