I just kegged my first all grain Monday. I did the 30psi for 3 days method. Over the last three days I've been sneaking a taste and it's been pretty good. This morning I adjusted the pressure to serving (10psi). I just tried it and it didn't taste as good. Kinda strong tasting. Has anybody ever have this problem or am I nuts...
 
Even Kegged Beer needs some time to mellow out.
I don't know why....barring any infections or maybe just an "odd Time" for your beer that this may be. Put the pressure back up and see whats up.
