Garrison Beers - Cloning for extract help needed!

Hi,

I recently went on a trip to Nova-Scotia and discovered the Garrison Brewing Co.

I loved there Hop Yard Pale and the wife loved the Raspberry Wheat.

I went to there website garrisonbrewing.com and discovered they actually have the ingredients posted with a few readings.

I would love to brew clones of these. Could anyone help me in creating a extract recipe for both of these? I have very limited knowledge of extract brewing.

From there website

Hope Yard Pale:
Bitterness: medium
Malts: 2-row Pale, Crystal
Hops: Nugget, Amarillo, Cascade, Cascade(Dry-Hopping)
IBU: 40
OG: 1.051
ABV: 5.3%


Raspberry Wheat:
Bitterness: low
Malts: 2-row pale, wheat, dextrin
Hops: Pilgrim
IBU: 13
OG: 1.044
ABV: 4.6%

How big are your boil is, that plays a big role in the amount of hops you need to hit your bitterness.

Using the ingredients I can get you in the ballpark, but you will probably have to brew and then tweak to hit the flavor you are looking for.

5 gallon batches.

Hope Yard Pale:
6 lbs Pale DME
.5 lbs Crystal 40/60

Enough Nuggets at 60 min to hit 40 IBUs
.5 oz Amarillo @ 5 min
.5 oz Cascade @ 5 min
.5 oz Amarillo @ 0 min
.5 oz Cascade @ 0 min
1 oz Cascade Dry Hop

Ferment with 001/1056/US-05

Raspberry Wheat:
5 lbs Wheat DME
.5 lbs Carapils

Enough Pilgrim (or pretty much any hop you like) at 60 min to hit 13 IBUs

Ferment with 001/1056/US-05

They probably add raspberry extract (what color was the beer), but I would suggest a can of Oregon puree in secondary for the fruit flavor.

This is a big help and great roadmap for me. I was planning on reading up on recipes creating for lack of a better word, in order to help me.

Few answers:

My boil can be 2-3 gallons, perhaps I need to build that brew keg sooner!

The raspberry wheat beer was, well, beer color, slight tint perhaps compare to a coors or miller. I got it on a draft plank (couple of beers on a piece of wood) with and IPA and leffe. I had to distinguish by smell what beer was the raspberry one.

Glad I could help. Certainly sounds like they just used raspberry extract. If you want to use it wait until bottling and then add it to taste.
 
Ok this is what I am doing today:

10 gallon batch Hope Yard Pale (Clone):

6x1.3 kilo Pale LME

1.5 oz (pellets)Nuggets @ 60 min IBU 40.4
1 oz Amarillo @ 5 min
1 oz Cascade @ 5 min
1 oz Amarillo @ 0 min
1 oz Cascade @ 0 min
2 oz Cascade Dry Hop

Ferment with dry ass yeats. I'll re-hydrat but the lhbs had to pop ale yeast out of kits for me. They had NOTHING. All sold out ;(
