So I froze concentrated some beer and got the good stuff out put in jars and froze those as step 1 of the subsequent cold crash.

The left over ice I left on the counter in a 80 degree house and left town for near 2.5 weeks.
I found fungus in the bottles I left open, no fungus in bottles I left with the pourer on and none in the closed up ones.

Will fungus grow if there was super low sugar or if it had anything near 2-3% or more alcohol.

I'll research too. But you guys are likely to know far more than the rest of the internet.

Microbes need a source of carbon to grow, and they don't need much. So, any residual sugars or other organic molecules can support growth. Just look at fungal/bacterial growth in a wet environment like a shower or bathtub.
 
Yea, OK that is not indicative of being high carbs or low abv. Need to test it to be sure. I guess.

Are you trying to gauge the alcohol level and/or gravity level of the ice portion of the freeze concentration by the presence of mold growth??

That's not really a quantitative indicator.
