Hello I know this is probably posted somewhere else but I could not find the exact answer.

This is my first time brewing with fruit. It's an all grain brew and its 5 gallons. I allowed the beer to sit in primary for 2 weeks and then added 10 pounds of frozen peach purée for the secondary. After 6 days and a crazy fermentation I just tasted the beer and it does not taste like peaches at all it just taste like plain beer. Not sure if I should add extract when bottling or allow it to ferment a little bit longer. The beer is still a little active 2-3 bubbles a minute. I am also afraid of leaving the fruit in there too long. Any help would be great.

fresh fruit is a delicate thing, each fruit will ferment differently and leave different flavors. i would rack the beer to clear out the peach, and add an extract to get your peach flavor.

with all that extra sugar converted you might have a beer that will knock you on your ass. lol
