Freezing mint leaves

I have a bounty of mint in my garden and want to ferment it somehow. Maybe a session mead or something more traditional. I also will be brewing a mint chocolate stout (Radical Brewing recipe). However, I know I won't be getting around to it for a while.

Sooo...Can I freeze the mint leaves and use it later? I already have a sizable mint tincture from last year that still tastes great so that's already covered.
 
Yes you can, wash then dry and spread them out on a baking sheet in the freezer for 3-4 hours. Then you can put them in baggies for indivual service or If you don't care if they are stuck together just throw in a bag and freeze
 
I've frozen mint leave before. They aren't as flavourful as fresh, but definitely still good. I use them to flavour drinking water, not brewing. You could also consider drying them. A lot of people make mint tea this way. From what I've heard, it's preferable to use dried leaves in tea.

Another alternative is to make put them in alcahol, such as vodka or everclear and make a tincture or extract.

Yup I already gave about 12 ounces of tincture from last summer. It still tastes good.
I will go ahead and freeze the leaves for brewing later this year.

Not sure myself, but I have heard that brewing with mint doesn't actually give you a nice mint flavour but rather strange "green" flavours.

Once when I was a young lad I added lemon thyme to gin hoping to get a unique product. Tasted like lawn clippings.

Just be cautious with adding it, cause it could undergo biotransformation like hops in primary?
