Alright I have a smoked porter that will be two weeks old tomorrow. The yeast still has yet to flocculate out. Is this normal? I just switched to better bottles and can finally observe fermentation for the first time. I used WLP 001 and controlled the ferm temp. Ramped up to 74°F for what I thought was the tail end of fermentation. Anyone with any insight on this?

Thats a little long for 001 since it is a pretty high floculating yeast but it is also a work horse and a trusty little fungi. Let it sit another week to do its thing (make beer).

After a week take a gravity reading and see where you are at. that will determin what to do from there.
