I've been hearing more and more about adding anywhere from 50-85% of extracts (LME or DME) at flameout. I only have 3 batches under my belt but I am eager to learn anything that can help me in my quest for better beer. My question is, if I decide to add extract at flameout, what to do with my chiller? I've been putting it into my pot with about 15 minutes left in the boil to sanitize it. I don't think I can get my extract stirred in with my chiller in the pot, but if I pull it out to stir in my extract wouldn't it the be very susceptible to bacteria covered with wort and out in the air? Immerse in a bucket of starsan until ready? Thanks in advance, this is an awesome community
 
Stir in your late extract addition, return the wort to a boil and then immerse your chiller for 15 minutes. The heat can be turned down after you get your hot break. A boil doesn't have to be the intensity to spit volcanoes. Too vigorous of a boil is one of the reasons extract beers are much darker than they should be.

edit: Oops you want to add the extract after turning off the heat. As @Brownalemikie has said the wort will still be hot enough to sanitize the chiller. Pasteurization temperature is 165°F. As long as your wort chiller doesn't have chunks of debris on it this should do it.
 
I've always just rinsed and sanitized my chiller when I'm done with it knowing it would go in a full boil next time. So maybe just soak in starsan while brewing and wait to put it in until after flame out additions? Sounds worth a try, how long would the temp need to stay above the 165*? How quickly would it be sterile?

It would be sanitized in seconds. But if you have the chiller already sanitized, that doesn't matter anyway.
 
I think you need a little time to dissolve the extract. Add it at 10-15 mins and stir. Then put the chiller in at 5-10 mins left.

171°F for 30 seconds is the recommended hot water sanitizing time in the food industry.
 
It seems like a big waste of Starsan to mix up 5 gallons to soak the chiller in.

I tried this for the first time yesterday albeit i think i did it backwards but still worked out fine... I addedd 2lbs @ 40min into boil (leaving 20min.) and added chiller at 45min.

I say i may have did it backwards because i did 3lbs of wheat extract up front and then smaller amount of 2lbs light DME...

I was worried the DME would clump up and stick to my chiller, happy to find out it was effortless and didnt gunk up:mug:
 
i just did this on my second batch. this one is a brown ale. i will update if i can tell a difference. i had 6 pounds of LME i split it 50/50. i did my steep in 3 gallons of water for 45 min then pulled off the burner added half mixed well, then up to a boil for an hour the last 20 min i added the last half mixed well then at 15min i added my last bit of hops and my cooler. keep in mind this was my second batch haha.
 
I hit my chiller with a squirt bottle of Starsan.

All extract can go in at flameout. You don't need any extract to isomerize the alpha acids in the hops. The only concern is pH and i haven't had a problem.

I like making a simple extract IPA with DME. Get water to boil. Turn off heat. As extract. (Pull off some unhopped wort to feed bug cultures.) Add sugar and hops, cover and let sit 1/2 hour.

I put 2, 1 gallon water jugs in fridge the day before I start so they'll be ready
 
Well since everyone else is throwing in their different extract methods, I'll help to muddy the waters too.

When doing an all-grain I'll soak my chiller in a sanitizer filled fermenter until the boil is done. When doing an extract I do similar to what @jalc6927 does. I don't see why you couldn't hybrid this and soak your chiller during your extract boil.

I don't know how it would be possible to know that the water the ice is made from is sanitary. I also have seen too much mold growing in some freezers that hold the bags of ice to put this ice in my fermentor.

I'm glad that works for you, but for many people local water may be high in alkalinity, so maybe freezing some RO or distilled water would be more advisable than buying bagged ice from a water source that may not be sanitary nor good for brewing water.

Unfortunately, pouring boiling water over ice won't sanitize the water in the ice.

Cool recipe too. I have been wanting to do basic brewings 15min pale ale. I think its a clever way of keeping a pipeline going. The only problem is grain is cheaper, that's all that is holding me back.
 
I've done over 100 this way with 0 issues,

The great thing about brewing is everyone can do it their own way
 
I actually use a 4 lb can of Alexander's pale LME. 4# LME + 1/4# sugar makes a good 1.050 beer in a 3 gallon batch.

I use plain sugar if I'm using fruity hops; turbinado if I'm using resiny/dank hops.

Quite tasty and super easy. The Alexander's LME is good in my book.

I've pulled off pre-hopped wort for starters as well.

Dumping hot to my corney fermenter means no chilling either.

Win, win.
 
That works as long as you're letting it cool enough first. Real hot liquid and plastics aren't a real good idea. Besides thermal deformation you will leach out undesirable chemicals.
 
I've not tried the room temp method, I'm sure it works

The ice and cold water help me get it all done in one setting

Too each their own

Great beer is the goal regardless of how we get there
