Hi there.

I am trying to make a whole grain wheat beer, and want to use whole wheat.

How can I flake the wheat?

Or do you have any good recipes using raw wheat (doing all the "cereal mashing and all of that)?

I really appreciate your help, I am exited to start this, it is a new style for me.

Flaked wheat is made by steaming wheat grains and then rolling them between rollers to flatten them. So far as I know, no one does this outside of an industrial setting. Also, the processing destroys all of the enzymes present in the grains, requiring them to be mashed with other (malted) grains in order to convert the starch into sugar. If you wanted to use the maximum amount of flaked wheat possible, you would probably do best by mixing it with 6-row malted barley, which has the highest enzymatic power of any brewing grain, and adding rice husks so that the mash doesn't gum up due to the high proportion of wheat in the mash.

Another questions, I have raw wheat on hand, how do I mash it, my final goal is to make a wit beer. Can you explain or guide me to any www... site. I have searched but have not gotten any info yet.
