Go buy another bucket and kit tomorrow and spend the day brewing batch #2. Leave this batch for another week or so to finish/clear up/age a bit before bottling.
 
Just thought I'd give an update on this brew. I'm now three weeks in, and it's delicious! It's really strong and dark, but I love it. Fermentation temps got a bit high because I'm in central Texas, but luckily, I don't taste any off flavors aside from a SLIGHT cidery taste like young green beer. I think because it is so dark and strong (6.8abv), it may need another week or two. Thanks to everyone who posts on this site (and especially this thread) for all the help!

P.S. Talk about a brewing addiction - I have already bought another fermenter, and made two more five gallon batches plus a 2.5 gal of apfelwein! Fat tire clone is bottled, and the honey kolsch has another 10 days in fermenter. Up next, corny keg and another Weizenebeir! Only problem is that now I can barely drink the cheap high life I was so accustomed to. Oh well!
 
Those where the fun days... all ways enoyed opening up the box and just making beer.
