Ok, been brewing only beers, but have now attempted my hand at a hard cider. I currently have two one gallon jugs fermenting. One was made with adding brown sugar, the other I added frozen apple juice concentrate. Pectic enzyme added to both for clarification. It's been 2 weeks and it appears fermentation has basically stopped. I wanted to add some cinnamon to each. My question is, do I need to add the cinnamon to a secondary and wait OR can I simply add the cinnamon at bottling? Also, how much cinnamon for 1 gallon?
