Flor sherry will ferment 4 pounds per gallon to a semi sweet 18% abv mead. Right now you have about 3 pounds per gal. I wouldn't have added the water, but I make lots of meads and have for years. Don't worry your mead will be fine but you need patience. Leave it alone for the next 2 months then rack it and plan on only checking how clear it is every 2 to 3 months.
