Well, the first brew day of the season kicked off on Sunday. I had stopped into High Gravity in Tulsa to grab ingredients, but had forgotten my recipe sheet. Ended up grabbing 7lb of Golden LME, .5 of 6-Row, .5 Carared, and .5 of Caramel 120. I didn't grab any yeast, as I usually have plenty on hand. And this being an fairly generic ale I figured US-05 would be fine. For hop I chose 2 ounces of Cascade pellet. Added 5tsp of Yeast nutrient at 5min. Boil went fine, although I did notice that I was getting more protein coagulation at pre-boil, like a lot. More than I normally see at post-boil. But aside from that, everything went fine and I hit all my numbers.

After chilling, I transfered to my new 6.5gal carboy, and here is where it get interesting. I didn't have any US-05, All I had was US-04. So I sprinkled in a half packet of US-04, rigged up my blowoff tube, and placed it next to my floor vent with a blanket around it.

Fermentation got going after about 5-6 hrs. Temperature has been maintained at 68F, and fermentation was vigorous, with a strong krausen, lots of visable movement in the beer, and a bubble from the 1/2" ID line a fraction faster than one bubble a second. Everything was looking great.

This morning I woke, grabbed a cup of coffee, and went to check on my beer only to find that the fermentation had slowed. The Krausen had fallen, and the bubbling had slowed to one bubble ever 2 seconds or so. And the beer looked almost still, with little movement inside.

Typically I don't start seeing this for several days when the fermentation is rolling to a stop. But less than 48hrs??? Anyone experience quick fermentation like this? It throws me off, because the only time I've every experience anything like this was when I had a vast over pitch. But with only half a packet of yeast, and a 68F maintained temperature, it doesn't seem like it should be getting done this fast.
 
Outside of when I rack? Not really, I need to buy a wine thief... It's still fermenting, so no stall, I am just not used to seeing this. But then again I don't normally use a lot of English ale yeasts... Typically if I use a dry yeast it's us-05 or wine yeasts for cider.

S-04 is a fast fermenting yeast. Your fermentation temperature was at the top of the range for the yeast, if 68° was wort temp and not ambient.
The under pitch may have a part in the fermentation slowing this soon.
 
I can always re-pitch if needed, I suppose. I guess the only way to know for sure is to let it finish what it's doing and check it when I transfer to secondary. I'm just baffled, never had a issue with pitching a half packet before. But then again, I normally brewed in a bucket, this is the first run with a 6.5gal carboy. To clarify, the ambient is at 68f, but it is sitting about 6 inches from a floor vent, which I'm sure is bringing the temp down way below 68f. I need to get a temp strip, but am afraid it wouldn't be accurate due to having the temp blowing right on top of it. Oh, the troubles of not having room for a fermentation fridge....

A tub of cool water is an easy way to moderate fermentation temperature. Can add ice, frozen in plastic soda bottles to cool even more.
Have the water level near the level of the beer in the fermentor and the temperature of the water will be very close to the actual temperature of the beer.
The water is a basic heat sink. Dissipates heat and moderates temperature swings.
 
68* ambient with a blanket around it and a very vigorous fermentation - I suspect the beer temp was likely in the mid 70's at least. Given a fast fermenter like S-04 I think this sounds pretty normal.
 
^^^ the blanket is a light throw blanket, for keeping out light. It's not doing much in the way of keeping it warm, considering the breeze from the vent can easily be felt through the fabric. But may be a little above ambient. Need to see about getting a floating thermometer.
