Hey guys. Brand new to this forum. I have been doing as much research as possible to keep myself from asking too many dumb and easy to find answers. I am planning on making a one gal batch of cider using R.W. Knudsen Cider & Spice (no sugar added). Few simple questions to get started.
This cider is already pasteurized, so will I need to do it again? I have campden tablets to do this if needed.
I am using Nottingham yeast at 1g per liter. Is this correct?
Do I need to add extra sugar to help it ferment?

I do not know the amount of Nottingham per L, because I always just aim for a packet for 3 gallons and half a packet for 1. That's probably not kosher though. You do not have to add extra sugar, but many people do to increase the alcohol. You should invest in a hydrometer and use that, per the instructions, to decide if and how much sugar to add. You do not need to pasteurize again, but make sure that the cider does not have any preservatives. If it does, then it will resist fermentation.
