does this mean finch is no longer building that initech looking complex on the chicago river on top of the most polluted soil in chicago?

side edit, anyone wanna fund this for team middle brow? its so pleasant looking and fits with modern urban architecture. pay no attention to the fact the soil has 100 years of molten pollutants.

Finch's originally hoped to open a brewery site on the Chicago River.

"We negotiated that for like 10 months and it just ended up being too expensive," he said. "At the same time we started looking at suburban sites because we knew there was a lot of opportunity out here to find things like this."

Also, does it make sense to truck in water for brewing from the Lake? I'm assuming it's trucks - maybe they plan to build a giant pipe, instead. I mean, it takes a lot of water to make beer - how is it economical to get Lake Michigan water out to Long Grove?

I imagine long grove gets lake michigan water, no? can one you northerners confirm? (EDIT & hat tip to lurchingbeast ) if I had to bet, Finch doesn't worry about its water profile too much but thats speculation.

I know - but if you recall - 2011 XOCOLATL >>>>>>>> 2012 Mayan Gold.

Maybe there was a difference in barrels/time, not sure, but the main difference (no Rick Bayless collaborator) had to have some impact.

That beer was fantastic. I hope to see that in bottles at some point in the future.

Bayless said construction and permit problems pushed the scheduled fall opening to early 2016. He said, though, it makes more business sense to open in the spring, so he’d rather take his time.

Did they already rename their brewery? I thought it was called Tocayo? Or is Cruz Blanca just going to be the name of the tap room where Tocayo products are served like The Funkatorium for Wicked Weed
 
Serious question: why do so many breweries these days feel the need to have multiple brands? Just because you put it in a barrel or it is sour or you are using weird ingredients doesn't mean you need a different name on the bottle. It is gratuitous.
most have nothing to do with multiple branding and everything to do with self distributing and getting away from their distributor who makes a lot o money on main brand.

also, i've read that the northman (the fountainhead cider bar offshoot) is finally opening in february. i've heard that before, so we'll see if it actually comes to fruition.

A lot of my issue is with places like Stone and The Bruery and other well established brands that feel the need to make more labels. Are they suffering from distributor issues? My other issues are possibly with places that don't really distribute in general, which seems like self-indulgence.

Would the Hill Farmstead brand suffer from an Anchorage collaboration on the shelves across America?

This is not a fully formed thought or argument, but it bugs me for some reason.

All around the country, brewers are finding inspiration from and collaborating with legendary metal musicians – and the results are often exceptional.
