I'm been told that a week after bottling the beer (when it has gas), its advised to store them on the fridge to let the beer improve even more.
I've made a test with a couple of bottles of a "duvel" recipe where the fermentation went to high and the alcohol presence was just too much. After two weeks forgotten on the fridge, I tried one. The result was a total new beer. Smooth, tasty and with a very low alcohol presence.
Do you guys do this also?
Since I have a small space on the fridge, I can't have all the bottles at once, so my question is: can I have beers for a few weeks on the fridge and then store them out at ambience temperature without affecting the flavour? I believe Duvel does this.
