Hello everyone,

I'm been told that a week after bottling the beer (when it has gas), its advised to store them on the fridge to let the beer improve even more.

I've made a test with a couple of bottles of a "duvel" recipe where the fermentation went to high and the alcohol presence was just too much. After two weeks forgotten on the fridge, I tried one. The result was a total new beer. Smooth, tasty and with a very low alcohol presence. :D

Do you guys do this also?

Since I have a small space on the fridge, I can't have all the bottles at once, so my question is: can I have beers for a few weeks on the fridge and then store them out at ambience temperature without affecting the flavour? I believe Duvel does this.

Interesting. Beers will typically carbonate and conidtion much slower in the fridge, due to the lower temps (obviously). And yes, some recommend that once your beer is adequately carbed, to put the beers in the fridge. However, as long as you keep your bottled beer in a dark and cool (cellaring is a popular term) your beer will be fine and condition appropriately.
 
Thanks for your opinion. I will proceed with more tests to check the improvement for other bottles.
 
Unless you are lagering,fermentation will cease at the colder temperature of a fridge. Your beer should clear a bit after several days in the fridge and the CO2 will settle from the bottle headspace down into the beer itself. This will add to more even carbonation. Conditioning will continue as long as it is bottled, so the 2 weeks you forgot about it, did help to mellow out the alcohol a bit.
