How about an area for Fermented Veggies like Sauerkraut, Kimchi, Hot Sauces etc... I am new at this but it is Fermenting and maybe we could help each other Out. Like we.do with Grilling and Cheese Making.
Here are a few of my Ferments
Rudabega, Celery Root and Carrot Sauerkraut
Lemon, Fennel, Mint Sauerkraut
Szechuan Pepper Cranberry Hot Sauce
Mixed Pepper Berry Blend Hot Sauce
Habanero Honey Garlic Hot Sauce

Last fall I ground up all the brown habaneros before the killing frost came and decided to try the Tabasco method of fermenting and aging it. I usually cook and blend the mash then add salt and vinegar and mason jar it. At first it smelled but now it actually smells pretty good and that is sitting in an unsealed jar. At first I used cheesecloth then put a lid on loosely. There was only salt in it originally, then months later I added some vinegar.

At this point I don't even know if it is safe to eat?? Looks and smells like it would be ok but I believe botulism is undetectable, not sure.
