When we say ferment at 70 F, do we mean set the ambient temp to 70? or make sure the wort stays at 70?
 
When you ferment at 70, the wort's temperature should be at 70 degrees. Depending on how you ferment, the fermentor will be up to 10 degrees warmer than ambient conditions.
 
Beer temp. I place most temperature controller probe against the outside of the carboy and insulate it from ambient air by placing bubble wrap over it.
 
That's a good tip with the temp probe. Mine is just hanging out in the back of my fridge, but I have used it for so long that I have a fairly good idea at what temp to set the fridge to to get the right ferm. temp.

Although last night after lying in bed I was like, "Damn!, I need to turn my temp. probe up a few degrees so my ferm. doesn't get too low". But then I fell asleep, good thing it was all good this morn!
