Looks like an analog thermostat which means it's unlikely to need a button-press every time the power shuts off.
That's a bottom-line, do-not-pass-go requirement when using an external controller in a conventional fashion (interrupting the AC power to the freezer).

Looks fine. Will probably only be big enough for one batch at a time though -- I only saw overall dims listed on the site, not interior. Decide if its worth it to you to get a bigger one or not.
 
So I just have a male and female plug on my controller, just turn the freezer all the way down and plug it in?
 
Other good stuff on the STC1000 you can do if you want. I'd rec. setting a compressor delay so it doesnt cycle too much.
 
Ok...so....

Lid barely closes with carboy. Can I just drill a hole in the lid and run hose up to airlock?
