Hello all! 2 questions:
1) Without a winetheif, how do you get a sample from the carboy to test the gravity of your beer? Just tip it over and pour some?
2) I've had an Anchor Steam Porter (all grain) fermenting for the last 14 days. I was thinking that it would be done by now, but there still seems to be some positive pressure - the airlock isn't bubbling, but is still being pushed and held up. Now, I know that taking a gravity sample 3 days in a row will give me a concrete answer, but as I haven't figured out a great way to draw a sample (see above), I was just going to wait it out, as I've done in the past. I'd love to bottle this weekend if possible. Is two weeks usually enough time? Thanks for your help!
